LEMON BASIL CHICKEN, from Chef Carl Rubadue


As summer leaves us, the BBQ still beckons and the outdoors are where we want to be! This simplemarinade and easy prep is perfect for the evening and quick for after work or to pack ahead for a contribution to the picnic or gathering of friends

Chicken Breasts, boneless and skinless Kosher Salt Fresh Ground Black Pepper Basil Fresh, stems removed and chopped Fresh Lemon Juice Lemon Slices Olive Oil Pan Spray

1) In small mixing bowl combine basil, olive oil, lemon juice, and lemon slices to make the marinade. Let set for 15 minutes. Place trimmed chicken into marinade and let set from 30 minutes to 12 hours. 2) When ready to cook, pre-heat grill to medium high 3) Spray pre-heated grill with pan spray. 4) Place marinated chicken on seasoned grill at 10 o’clock, cook 2 to three minutes and spin, not turn to 2 o’clock. Cook 2 minutes more. 5) Spray chicken with pan spray and turn and point at 10 o’clock, cook 2 minutes and spin to 2 o’clock. Cook 2 minutes more, check with a thermometer and insure temperature is 155/160. Remove from heat, cover and let set 5 minutes. 6) Serve
